Kyle had to attend a dinner for work - and it was at some fancy seafood restaurant...ah the perks of employment. So it was just me and Brooklyn for dinner. I pulled out my Accidental Vegetarian cookbook and whipped up some blueberry pancakes - made with cottage cheese (and I threw in some flaxseed). Brooklyn is crazy about blueberries, so I was lucky to salvage some from the bag before she consumed them. Here's a shot of the pancakes in the making.
